Pan-Fried Gnocchi with Chestnut Mushrooms

Ingredients

  • 500g Potato gnocchi

  • 150g butter

  • 250g Chestnut mushrooms, finely sliced

  • 2 cloves of garlic, finely chopped

  • handful spinach leaves

  • handful of grated parmesan for serving

Method

Step 1

Heat a large saucepan full of salted water until boiling. Cook the gnocchi for 5 minutes, or until they have all floated to the top.

Step 2

Heat one-third of the butter and a splash of olive oil in a non-stick frying pan over medium heat until all the butter has melted. Add the mushroom and garlic and cook for 5 minutes or until soft. Transfer to a heatproof bowl.

Step 3

Heat the remaining butter with a splash of olive oil in pan over medium heat Add the gnocchi and cook for 5-10 minutes or until the gnocchi and butter are golden.

Step 4

Transfer the mushroom to the gnocchi mixture and add the spinach leaves. Allow to heat through and the spinach to wilt for 1-2 minutes.

Serve your pan-fried gnocchi with a topping of grated parmesan.
