Creamy Yacht-Spiced Chicken

Juicy, pan-fried chicken in a zingy cream sauce. Yacht spice is an all-purpose spice mix first seen on Munchies. Apparently if you are ever on a yacht, this is the only spice mix you will need on board!

Serves 4


Ingredients


4 large chicken breasts sliced in half lengthwise

2 tablespoons (separated) Yacht Spice Mix (see below for ingredients)

Plain flour for dredging

2 tablespoons butter

1 tablespoon olive oil

3 cloves garlic diced

Handful of sun-dried tomatoes

100ml chicken broth

300ml heavy cream


Ingredients for Yacht Spice Mix


3 tablespoons yellow mustard powder

2 tablespoons coriander seeds

2 tablespoons Szechuan peppercorns

2 tablespoons whole black peppercorns

6 tablespoons Maldon Sea Salt flakes

5 tablespoons onion powder

5 tablespoons light brown sugar

2 tablespoons garlic powder

2 tablespoons smoked paprika


Method for Yacht Spice Mix


Place the coriander seeds and the Szechuan and black peppercorns in a medium skillet over medium heat.


Toast the spices until fragrant, 3 1/2 minutes. Cool completely, then transfer to a spice grinder. Grind to a powder, then transfer to a bowl with the remaining ingredients and mix to combine.


Note: If you don’t have a spice grinder, you can always use pre-ground spices, just mix everything together and store in a mason jar until you need to use it.


Method for Creamy Yacht-Spiced Chicken


Step 1


Butterfly the chicken breasts in half lengthwise so you have four thinner cutlets. Season with salt & pepper. Pour the plain flour and 1 tablespoon of the Yacht Spice Mix into a large bowl and toss in the chicken, ensuring you coat everything evenly.


Step 2


Add the butter and olive oil to a cast iron skillet or fry pan over medium-high heat. Once the pan is hot, add the chicken. Cook it for 4-5 min/side until it's nice and golden. Take the chicken out of the pan and set it aside.


Step 3


Add the diced garlic, sun-dried tomatoes, and chicken broth to the pan. Let it bubble for a minute, until the garlic becomes fragrant.


Step 4


Reduce the heat to medium and stir in the cream and remaining 1 tablespoon of Yacht Spice Mix.


Step 5


Add the chicken back into the pan and cook for another 5 minutes or so, until the sauce is thickened and the chicken is cooked through.


Serve over pasta, with rice or as pictured with roast vegetables.
