This homemade basil pesto will take your dish to the next level

Penne Pasta with Homemade Basil Pesto

Ingredients

  • 1 bunch fresh basil

  • 50g Parmesan cheese (shaved)

  • 150ml Olive oil

  • 2 cloves garlic

  • handful of pine nuts

  • 500g dried Penne pasta

  • Sea salt

  • Black pepper

Method

Step 1

Heat a large saucepan of water until boiling. Make sure to season generously with sea salt.

Step 2

For your basil pesto, toast your pine nuts in a dry frying pan over a medium heat until golden.

Step 3

Get out your food processor and add the toasted pine nuts, shaved parmesan, bunch of basil and garlic cloves. Loosen with 150ml of olive oil and blitz everything together until nice and smooth. Season to taste with salt and pepper.

Step 4

Add your penne pasta to the boiling water and cooking for 10-12mins or until al dente. Once cooked, drain and add in a splash of olive oil to stop the pasta sticking together.

Step 5

Add your fresh basil pesto to the pasta and stir through.

Serve with shavings of parmesan. Enjoy!
